These Korean Ground Turkey & Rice Bowls are a delightful fusion of flavors, offering a healthy and quick meal option. Tender ground turkey is infused with a savory and slightly spicy Korean-inspired sauce, served over a bed of fluffy white rice, and topped with colorful vegetables for a burst of freshness and crunch.

Ingredients

  • 1 pound ground turkey
  • 1 cup cooked white rice
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 small onion, finely chopped
  • 1 medium carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded cabbage
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Optional: sliced cucumbers or pickled radish for serving

Directions

  1. In a small bowl, whisk together soy sauce, gochujang, sesame oil, honey, minced garlic, and grated ginger to make the Korean-inspired sauce. Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chopped onions and sauté until they become translucent.
  3. Add the ground turkey to the skillet and cook, breaking it apart with a spatula, until it's no longer pink and cooked through.
