This Instant Pot Pork Stew With Red Wine and Olives is a hearty and flavorful dish that will satisfy your cravings for comfort food. Tender chunks of pork are cooked in a rich red wine sauce, infused with the briny goodness of olives. Ingredients

  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 cup beef or vegetable broth
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup pitted Kalamata olives
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Directions

  1. Season the pork cubes with salt and black pepper.
  2. Set your Instant Pot to Sauté mode and heat the olive oil. Add the pork cubes in batches and brown them on all sides. Remove the browned pork from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Pour in the red wine and scrape the bottom of the pot to deglaze, loosening any browned bits. Allow the wine to simmer for a couple of minutes to reduce slightly.
  5. Add the beef or vegetable broth, diced tomatoes with their juice, tomato paste, dried thyme, dried rosemary, and bay leaf to the pot. Stir well to combine.
  6. Return the browned pork to the pot along with any accumulated juices. Give everything a good stir.
  7. Close the Instant Pot lid, ensuring the pressure valve is set to Sealing. Cook on high pressure using the Meat/Stew setting for 30 minutes.
  8. Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick pressure release to release any remaining pressure.
  9. Open the lid and add the pitted Kalamata olives to the stew. Stir well and taste for seasoning. Adjust with salt and black pepper, if needed.
  10. Serve the Instant Pot Pork Stew hot, garnished with chopped fresh parsley. This stew pairs perfectly with crusty bread or creamy mashed potatoes.
