Ingredients

  • 1 pound boneless lamb or beef, thinly sliced
  • 4 to 6 pita bread or flatbreads
  • 1 cup plain Greek yogurt

  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • 1 cucumber, thinly sliced
  • Handful of fresh parsley, chopped
  • Squeeze of lemon (optional)

Directions

  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, dried oregano, salt, and black pepper. Mix well to create the marinade.
  2. Add the thinly sliced meat to the marinade and toss until evenly coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to meld.
  3. Preheat your grill or stovetop griddle over medium-high heat.
  4. Thread the marinated meat onto skewers, shaking off any excess marinade. If using wooden skewers, make sure to soak them in water for 30 minutes beforehand to prevent burning.
  5. Cook the skewers on the preheated grill or griddle, turning occasionally, until the meat is cooked through and nicely charred, about 8-10 minutes.
  6. While the meat is cooking, warm the pita bread or flatbreads in a dry skillet or in the oven.
  7. Once the meat is cooked, remove it from the skewers and set aside.
  8. To assemble the doner kebabs, spread a generous amount of Greek yogurt on the warmed pita bread or flatbread.
