  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon ground cumin
  • 1/4 cup sparkling water
  • Vegetable oil, for grilling
  • Freshly chopped parsley, for garnish

Directions

  1. In a large mixing bowl, combine the ground beef, lamb, and pork. Add the finely chopped onion and minced garlic. Mix well until all the ingredients are evenly distributed.
  2. In a small bowl, combine the paprika, black pepper, salt, baking soda, cayenne pepper (if using), and ground cumin. Mix the spices together, then add them to the meat mixture. Mix everything thoroughly to ensure the spices are well incorporated.
  3. Gradually pour the sparkling water into the meat mixture, continuing to mix until the water is fully absorbed and the mixture becomes slightly sticky.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Preheat the grill to medium-high heat. While the grill is heating, take small portions of the meat mixture and shape them into finger-sized sausages, approximately 3 to 4 inches long.
  6. Lightly brush the grill grates with vegetable oil to prevent sticking. Place the cevapi sausages on the hot grill and cook for about 4 to 6 minutes per side, or until they are nicely browned and cooked through.
  7. Once cooked, remove the cevapi from the grill and let them rest for a few minutes. This will help retain their juiciness.
  8. Serve the cevapi hot, garnished with freshly chopped parsley. They can be enjoyed on their own or served in warm pita bread with ajvar (roasted red pepper spread) and onions for an authentic Serbian experience.
