Frog Cake!

Indulge in a whimsical culinary adventure with my delightful Frog Cakes! These whimsical treats are a perfect blend of flavor and charm. Soft, moist cake with a touch of zesty lemon, topped with luscious buttercream and adorned with fondant frog decorations, these Frog Cakes are sure to make any occasion a leap into pure deliciousness!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/2 cup milk
  • Green food coloring (optional)
  • Buttercream frosting
  • Fondant icing (green and white)
  • Edible markers or colored icing for details

Directions

  1. Preheat your oven to 350°F and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. If desired, add a few drops of green food coloring to achieve a froggy hue.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely on a wire rack.
  8. Once the cupcakes are cooled, prepare the buttercream frosting. You can use a store-bought one or make your own using your favorite recipe.
  9. Frost each cupcake generously with the buttercream, creating a smooth surface.
  10. Roll out green fondant icing and cut out frog shapes using a frog-shaped cookie cutter. Place the fondant frogs on top of each cupcake.
  11. To add details, use edible markers or colored icing to draw eyes, mouth, and other features on the fondant frogs.
