Easy Goulash

This Easy Goulash recipe combines the rich flavors of tender beef, hearty vegetables, and aromatic spices in a comforting one-pot dish. Perfect for busy days, this recipe is quick to prepare and will satisfy your cravings for a warm and flavorful meal.

Ingredients

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 ounces elbow macaroni or your choice of pasta

Directions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion, minced garlic, diced red bell pepper, and diced green bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  3. Return the browned beef to the pot and add the beef broth, diced tomatoes (with their juices), tomato paste, paprika, dried oregano, caraway seeds, bay leaf, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, or until the beef is tender and the flavors have melded together.
  5. Meanwhile, cook the elbow macaroni (or your choice of pasta) according to the package instructions. Drain and set aside.
  6. Once the goulash has simmered for an hour, remove the bay leaf and adjust the seasoning if needed. If the goulash is too thick, add a bit more beef broth or water to achieve the desired consistency.
