Ingredients

  • For the Salad:
  • 6 cups mixed salad greens (such as spinach, arugula, and romaine)
  • 1 cup candied walnuts (see recipe below)
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/2 cup dried cranberries
  • 1/4 red onion, thinly sliced
  • For the Candied Walnuts:
  • 1 cup walnut halves
  • 1/4 cup granulated sugar
  • 1 tablespoon unsalted butter
  • Pinch of salt
  • For the Vinaigrette Dressing:
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Prepare the Candied Walnuts:
In a medium-sized skillet, melt the butter over medium heat.
Add the walnuts and sugar to the skillet, stirring continuously to coat the walnuts evenly.
Cook for 3-5 minutes, or until the sugar has melted and the walnuts are golden brown.
Remove the candied walnuts from the skillet and spread them out on parchment paper or a baking sheet to cool. Break them into smaller pieces once they have cooled.
  2. Make the Vinaigrette Dressing:
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Set aside.
  3. Assemble the Salad:
In a large salad bowl, combine the mixed greens, candied walnuts, crumbled Gorgonzola cheese, dried cranberries, and thinly sliced red onion.
  4. Drizzle with Dressing and Toss:
Drizzle the vinaigrette dressing over the salad.
Gently toss the salad until all the ingredients are evenly coated with the dressing.
  5. Serve:
Divide the salad into individual serving plates or bowls.
Optionally, garnish with additional candied walnuts and a sprinkle of Gorgonzola cheese if desired.
