Each layer of moist chocolate cake is sandwiched between a smooth and creamy buttercream frosting that is infused with chopped pieces of Daim candy bars. Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot water
  • For the frosting:
  • 1 1/2 cups unsalted butter, softened
  • 6 cups powdered sugar
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 8 Daim candy bars, chopped

Directions

  1. Preheat the oven to 350°F. Grease and flour three 8-inch cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Stir in the hot water until the batter is smooth and well mixed.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake the cakes in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of each cake comes out clean.
  8. Let the cakes cool completely in the pans before removing and placing them onto a wire rack.
  9. To make the frosting, beat the softened butter in a large mixing bowl until light and fluffy.
  10. Gradually add the powdered sugar, heavy cream, vanilla extract, and salt, beating on low speed until the ingredients are well combined.
  11. Increase the mixer speed to medium and continue beating until the frosting is smooth and creamy.
  12. Fold in the chopped Daim candy bars.
  13. To assemble the cake, place one cake layer on a cake plate or stand.
  14. Spread a generous layer of frosting over the cake layer.
  15. Repeat with the remaining cake layers and frosting, stacking the layers on top of each other.
  16. Use a spatula to smooth the frosting on the top and sides of the cake.
  17. Garnish with additional chopped Daim candy bars, if desired.
