Ingredients
- 2 1/4 teaspoons active dry yeast
- 1/4 cup warm water (110°F)
- 1/4 teaspoon saffron threads
- 2 tablespoons warm milk
- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, softened
- 1/2 cup warm milk
- 1/4 teaspoon ground cardamom (optional)
- 1/4 cup chopped almonds (optional)
- Extra saffron threads for garnish (optional)
Directions
- Activate the saffron: In a small bowl, crumble the saffron threads and mix them with 2 tablespoons of warm milk. Allow it to steep for 10-15 minutes, or until the milk turns a rich golden color.
- Proof the yeast: In a separate bowl, dissolve the yeast in 1/4 cup of warm water. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center.
- Add the yeast mixture, saffron-infused milk, eggs, and softened butter to the well in the flour. Mix everything together to form a sticky dough.
- Knead the dough: Turn the dough out onto a floured surface and knead it for about 10 minutes, or until it becomes smooth and elastic. You can also use a stand mixer with a dough hook attachment for this step.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
- Punch down the dough and shape it into a loaf or individual rolls. If desired, sprinkle ground cardamom and chopped almonds on top for extra flavor and texture.
- Preheat your oven to 350°F.
- Place the shaped dough on a baking sheet or in a greased loaf pan, cover it, and let it rise for another 30 minutes.
- Before baking, brush the top of the bread with some saffron-infused milk for a beautiful golden finish. If you'd like, you can also garnish with a few saffron threads.
- Bake in the preheated oven for 25-30 minutes (or until the bread is golden brown and sounds hollow when tapped on the bottom).
- Allow the saffron bread to cool slightly before slicing. Serve it warm with butter, honey, or your favorite spreads. Enjoy the delicate flavors and vibrant color of this unique and delicious bread!
