Jansson's Temptation is a classic Swedish dish that marries the creamy comfort of potatoes with the subtle richness of Swedish anchovies. This gratin-style casserole, named after the 19th-century Swedish opera singer Pelle Janzon, is a beloved holiday favorite that will leave your taste buds singing. Ingredients

  • 2 pounds potatoes, preferably starchy varieties like Russet or Yukon Gold
  • 2 onions, thinly sliced
  • 8-10 Swedish anchovy fillets (or substitute regular anchovies if unavailable)
  • 1 1/2 cups heavy cream
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 tablespoons breadcrumbs (optional)
  • Salt and black pepper to taste

Directions

  1. Preheat the oven to 375°F. Grease a baking dish with butter or oil and set it aside.
  2. Peel and thinly slice the potatoes into rounds, about 1/8-inch thick. You can use a mandolin slicer for even slices.
  3. In a large skillet, melt the 2 tablespoons of butter over medium heat. Add the sliced onions and sauté them until they become translucent and slightly caramelized, about 5-7 minutes. Remove from heat.
  4. In a separate saucepan, gently warm the cream and milk over low heat. Do not bring it to a boil; you just want it to be hot.
  5. Layer the ingredients in the greased baking dish as follows:
    Start with a layer of sliced potatoes.
    Follow with a layer of sautéed onions.
    Lay the anchovy fillets evenly across the onions.
    Repeat these layers until you've used all your ingredients, finishing with a layer of potatoes on top.
  6. Pour the hot cream and milk mixture over the layered ingredients, ensuring it covers everything evenly. Season generously with salt and black pepper.
  7. If desired, sprinkle the breadcrumbs over the top to add a delightful crunch.
  8. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes.
  9. After 45 minutes, remove the foil and continue baking for an additional 20-25 minutes or until the potatoes are tender, and the top is golden brown and bubbling.
