Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) coconut milk
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup sliced mushrooms
  • 1 cup baby corn, halved
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro leaves, for garnish
  • Cooked jasmine rice or rice noodles, for serving

Directions

  1. Set your Instant Pot to the Sauté mode and add the vegetable oil. Once it's hot, add the chopped onion and garlic. Sauté for 2-3 minutes until they become fragrant and slightly softened.
  2. Stir in the red curry paste and cook for an additional 1-2 minutes, allowing the paste to bloom and release its flavors.
  3. Add the chicken pieces to the Instant Pot, and sauté for 2-3 minutes until they are lightly browned on all sides.
  4. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine all the ingredients.
  5. Add the sliced red and yellow bell peppers, zucchini, mushrooms, and baby corn into the Instant Pot.
  6. Close the Instant Pot lid, ensuring the venting knob is in the Sealing position. Cancel the Sauté mode.
  7. Select the 'Pressure Cook' or 'Manual' mode, and set it to high pressure for 5 minutes.
  8. Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes. Then, manually release any remaining pressure by turning the venting knob to Venting.
  9. Open the Instant Pot lid and stir in the fresh lime juice. Taste the curry and season with salt and pepper as needed.
  10. Serve the Instant Pot Thai Red Curry over cooked jasmine rice or rice noodles.
