- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons red curry paste
- 1 can (14 ounces) coconut milk
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 zucchini, sliced into half-moons
- 1 cup sliced mushrooms
- 1 cup baby corn, halved
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro leaves, for garnish
- Cooked jasmine rice or rice noodles, for serving
Directions
- Set your Instant Pot to the Sauté mode and add the vegetable oil. Once it's hot, add the chopped onion and garlic. Sauté for 2-3 minutes until they become fragrant and slightly softened.
- Stir in the red curry paste and cook for an additional 1-2 minutes, allowing the paste to bloom and release its flavors.
- Add the chicken pieces to the Instant Pot, and sauté for 2-3 minutes until they are lightly browned on all sides.
- Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine all the ingredients.
- Add the sliced red and yellow bell peppers, zucchini, mushrooms, and baby corn into the Instant Pot.
- Close the Instant Pot lid, ensuring the venting knob is in the Sealing position. Cancel the Sauté mode.
- Select the 'Pressure Cook' or 'Manual' mode, and set it to high pressure for 5 minutes.
- Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes. Then, manually release any remaining pressure by turning the venting knob to Venting.
- Open the Instant Pot lid and stir in the fresh lime juice. Taste the curry and season with salt and pepper as needed.
- Serve the Instant Pot Thai Red Curry over cooked jasmine rice or rice noodles.
- Garnish with fresh cilantro leaves for a burst of color and extra flavor.
- Enjoy your homemade Thai Red Curry with Chicken, a delicious and satisfying dish that's perfect for any occasion!
