Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1/2 cup milk
- Green food coloring (optional)
- Buttercream frosting
- Fondant icing (green and white)
- Edible markers or colored icing for details
Directions
- Preheat your oven to 350°F and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. If desired, add a few drops of green food coloring to achieve a froggy hue.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let them cool completely on a wire rack.

- Roll out green fondant icing and cut out frog shapes using a frog-shaped cookie cutter. Place the fondant frogs on top of each cupcake.
