Mushi Nabe: Steamed Veggies

Steamed Vegetables with Miso Sesame Sauce, also known as Mushi Nabe, is a delightful and healthy Japanese dish that showcases the freshness and natural flavors of seasonal vegetables. The vegetables are lightly steamed to retain their vibrant colors and crisp textures, and then drizzled with a savory and creamy miso sesame sauce. This dish is not only visually appealing but also packed with nutrients, making it a perfect addition to any meal.

Ingredients

  • Assorted fresh vegetables (carrots, broccoli, cauliflower, snow peas, bell peppers, etc.)
  • 2 tablespoons white miso paste
  • 1 tablespoon sesame paste (tahini)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2 tablespoons warm water
  • Sesame seeds, for garnish
  • Fresh cilantro or green onions, chopped (optional)

Directions

  1. Wash and prepare the vegetables by cutting them into bite-sized pieces. Keep the vegetables separate to ensure even cooking.
  2. Fill a large pot or steamer with water and bring it to a boil. Place a steamer basket or rack inside the pot.
  3. Arrange the vegetables in the steamer basket, starting with the ones that require longer cooking time, such as carrots and cauliflower. Steam the vegetables until they are crisp-tender, usually around 5-7 minutes. Be careful not to overcook them; they should still retain their vibrant colors.
  4. While the vegetables are steaming, prepare the miso sesame sauce. In a small bowl, whisk together the white miso paste, sesame paste, soy sauce, rice vinegar, honey or maple syrup, grated ginger, minced garlic, and warm water. Mix until smooth and well combined.
  5. Once the vegetables are done steaming, carefully transfer them to a serving platter or individual plates.
  6. Drizzle the miso sesame sauce over the steamed vegetables, ensuring they are evenly coated. Sprinkle sesame seeds on top for added texture and flavor.
  7. Garnish with fresh cilantro or green onions, if desired, to add a pop of freshness.
  8. Serve the Steamed Vegetables with Miso Sesame Sauce immediately while they are still warm. This dish can be enjoyed as a side dish or a light main course.

Enjoy the delicious flavors and textures of the Steamed Vegetables with Miso Sesame Sauce (Mushi Nabe) as a nutritious and satisfying addition to your culinary repertoire!
