Spicy Salmon Poke Bowls

These poke bowls are healthy, flavorful, and easy to make. The salmon is marinated in a spicy sauce, then seared and served over rice and vegetables. The result is a delicious, hearty meal that is perfect for a weeknight dinner.

Ingredients

  • 1 pound salmon, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon honey
  • 1 tablespoon vegetable oil
  • 1 cup cooked white rice
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/4 cup pickled ginger
  • 1/4 cup sesame seeds

Directions

  1. In a large bowl, whisk together soy sauce, rice vinegar, Sriracha, honey, and vegetable oil. Add the salmon cubes and toss to coat. Marinate for at least 30 minutes, or up to 2 hours.
  2. Heat a grill pan over medium-high heat. Grill the salmon for 2-3 minutes per side, or until cooked through. Remove from the grill and flake into large pieces.
  3. To assemble the poke bowls, divide the rice among four bowls. Top with cucumber, avocado, pickled ginger, sesame seeds, and grilled salmon. Serve immediately.
