Ingredients
- 1 pound salmon, cut into 1-inch cubes
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon Sriracha sauce
- 1 teaspoon honey
- 1 tablespoon vegetable oil
- 1 cup cooked white rice
- 1 cucumber, sliced
- 1 avocado, sliced
- 1/4 cup pickled ginger
- 1/4 cup sesame seeds
Directions
- In a large bowl, whisk together soy sauce, rice vinegar, Sriracha, honey, and vegetable oil. Add the salmon cubes and toss to coat. Marinate for at least 30 minutes, or up to 2 hours.
- Heat a grill pan over medium-high heat. Grill the salmon for 2-3 minutes per side, or until cooked through. Remove from the grill and flake into large pieces.
- To assemble the poke bowls, divide the rice among four bowls. Top with cucumber, avocado, pickled ginger, sesame seeds, and grilled salmon. Serve immediately.
