Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 pound potato gnocchi
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup white wine (optional)
- Juice of 1 lemon
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Red pepper flakes (optional, for a hint of heat)
- Olive oil for cooking
- Grated Parmesan cheese for garnish (optional)
Directions
- repare the Gnocchi:
a. In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat.
b. Add the gnocchi to the skillet and cook until they turn golden brown and crispy, about 5-7 minutes. Make sure to flip them occasionally to crisp up all sides. Once done, transfer them to a plate and set aside. - Cook the Shrimp:
a. In the same skillet, add another tablespoon of olive oil if needed.
b. Add the peeled and deveined shrimp to the skillet, season with a pinch of salt and pepper, and sauté for about 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside. - Make the Scampi Sauce:
a. In the same skillet, melt 4 tablespoons of unsalted butter over medium heat.
b. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
c. If using, pour in the white wine and let it simmer for a minute or two, allowing the alcohol to cook off.
d. Stir in the lemon juice, lemon zest, and red pepper flakes (if desired). Let the sauce simmer for another minute to combine the flavors.
e. Return the cooked gnocchi and shrimp to the skillet, tossing them in the scampi sauce until everything is coated and heated through. - Finish and Serve:
a. Sprinkle the chopped fresh parsley over the dish, and give it a final toss.
b. Taste and adjust the seasoning with salt and pepper if needed.
c. Optional: Garnish with grated Parmesan cheese for an extra layer of flavor.
d. Serve hot in the skillet, and enjoy your One-Pan Shrimp Scampi with Crispy Gnocchi. It pairs perfectly with a side of garlic bread or a simple green salad.
