Nian Gao, also known as Chinese New Year Rice Cake, is a delightful and symbolic treat enjoyed during Lunar New Year celebrations. This sticky and sweet dessert signifies prosperity and growth, making it a must-have for the occasion. In this recipe, we'll infuse Nian Gao with the rich and creamy goodness of red beans, adding a delicious twist to this traditional delicacy.

Ingredients

  • 1 pound Nian Gao (Chinese glutinous rice cake)
  • 1 cup cooked red beans (canned or homemade)
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional, for garnish)

Directions

  1. Prepare Nian Gao:
    If your Nian Gao is hard, soak it in warm water for 30-60 minutes until it softens. If it's already soft, skip this step.
    Cut the softened Nian Gao into 1/2-inch thick slices.
  2. Red Bean Filling:
    In a saucepan, combine the cooked red beans, sugar, water, and salt.
    Cook over medium heat, stirring constantly until the sugar dissolves and the mixture thickens to a jam-like consistency (about 10-15 minutes).
    Remove from heat and stir in the vanilla extract. Let it cool.
  3. Assemble the Nian Gao:
    Take a Nian Gao slice and place a spoonful of the red bean filling in the center.
    Carefully fold the Nian Gao slice over the filling, forming a half-moon shape. Seal the edges by pressing firmly.
  4. Pan-Frying:
    Heat a non-stick skillet or frying pan over medium heat.
    Add the vegetable oil and let it heat up.
    Place the stuffed Nian Gao slices in the pan, making sure not to overcrowd them.
    Cook for 2-3 minutes on each side, or until they turn golden brown and crispy.
  5. Serve:
    Remove the fried Nian Gao with red bean from the pan and drain excess oil on a paper towel.
    Optionally, sprinkle shredded coconut on top for added texture and flavor.
    Let them cool slightly before serving.
  6. Enjoy:
